Pollo a la brasa is actually barbecued chicken, usually over a charcoal fire, and delicious. Other Peruvian chicken dishes is our most famous, Arroz con Pollo, just \Chicken with Rice;\ however, the spices are typically Peruvian and give a special flavor found nowhere else.
