Bahrain: Shawarma Heaven

“Shawrmas are little pieces of heaven right here on god’s green earth. The unique mixture of the animal fat, the greased slices of spiced and marinated beef or chicken, a slight touch of taheena, pickles, vegetables or even taboula wrapped in a thin slice of pita bread is just unmistakable. A true signature dish of the Middle East, our very own burrito sandwich!” writes Bahraini blogger emoodz.

I was in Bahrain in the mid 1960’s with the RAF Dental Branch and also worked in a practice in Manama run by an Irish dentist named Phil McCafferty (t was really Clem McHarg but its a good joke!) I also played in an R&B band while I was there in several cafes and restaurants including one brilliant roof top venue – I can’t remember any of the names. Anyway…….. the blog about Shawarmas got my juices running. They are the best take away food on earth in my opinion. The flavour of the salad vegetables – particularly the tomatoes, the harissa or whatever the Bahrain name for it is, the singed so-thin bread and the shaved grilled lamb – especially from the real street vendors charcoal grills. I’ve bored family and friends for years with my description of them all.
I just wish I knew what the spices are that are put in the lamb before cooking so that I could have a go at making them here in France. Anybody put me out of my misery – please?

      John,

I was a patient pf Clem McHarg in Bahrain in the 1960’s. Fine dentist and funny man to boot. Often wonder what happened to him and his family

      Cheers
